皮蛋粥
【菜名】皮蛋粥
【所属菜系】浙江菜
【特点】口感润滑,鲜咸适口,约喝越香.
【原料】松花蛋二个、粳米二两、淡菜一两、精盐一钱、清水二斤、麻油三钱、料酒一钱
【制作过程】1、将淡菜用热水浸泡发软,剪洗干净,放入碗内,加料酒,上笼蒸至烂熟为度。
2、松花蛋去壳,切成碎米粒状。
3、粳米淘洗干净,入锅加清水上火烧开,再入淡菜、皮蛋、精盐,熬煮成粥后,入小麻油即可。
